This dataset contains morphological, metabolomic, and elemental data obtained from quinoa plants (Chenopodium quinoa cv. Titicaca) grown under controlled conditions with or without arbuscular mycorrhizal fungi (AMF) inoculation and subjected to salinity stress (0, 100, and 200 mM NaCl). The dataset includes measurements of primary metabolites (IC-MS/MS), amino acids (UPLC-FLD), soluble sugars (enzymatic assays), and mineral elements (ICP-MS), along with growth and physiological parameters. The data support the analysis of AMF-mediated responses to salinity stress.
