Assessment of Physicochemical Characteristics and Microbiological Quality of Fried Shrimps Sold in Rural Municipality of Loumbila

Abstract

The question this study addressed. This study analysed the physicochemical and microbiological quality of ten fried shrimp samples sold in the rural municipality of Loumbila, Burkina Faso. What this study adds to our knowledge. It shows that 60% of samples are of unsatisfactory quality. Total mesophilic aerobic flora reached 1.83 × 10⁶ CFU/g. Four samples were contaminated with total coliforms (up to 1.97 × 10³ CFU/g) and two with yeasts and moulds (up to 3.5 × 10³ CFU/g). No Salmonella, Shigella or E. coli were detected.
