Edible mushrooms belong to a group of antidiabetic phytotherapy agents that are rich in natural compounds, e.g., fibers, alkaloids, polysaccharides, and phenolics. In addition to their antidiabetic properties, they are known to have antioxidative and antihyperlipidemic properties. Mushroom polysaccharide is a known source of prebiotics and can act via modulation of gut microbiome composition to induce insulin resistance. Furthermore, in vivo and in vitro studies have shown that mushroom polysaccharide can exhibit anti-hyperglycemic effects via a reduction in glucose absorption, improved beta cell mass, and insulin signalling. It has also been demonstrated that terpenoids derived from mushrooms function as insulin sensitizers and alpha-glucosidase activity inhibitors.
